Established in 1999, Fraser Gallop Estate is at the heart of Margaret River’s Wilyabrup valley (20km) north of the town of Margaret river and six kilometres from the south west coast of Western Australia. The Estate enjoys splendid isolation and a moderate maritime climate created by the Indian Ocean to the north and west.

Description

Tasting notes

A medium-bodied red wine, with a beautiful vibrant crimson hue. Aromas of dusty mulberry, dried bay and eucalyptus leaf, currants and cedarwood oak give way to a palette of ripe berries with a hint of herbs. Clean acidity with a minerally feel to it. Length and complexity, and effortless drinkability.

Winemaker notes

The style of Cabernet Merlot they are making at Fraser Gallop Estate has greater freshness from a short barrel maturation. It also has a good concentration of flavour that comes naturally from dry-grown Cabernet Sauvignon in the blend. Just after berry-set, the vines were leaf-plucked to open up the canopy, which ensured adequate fruit exposure and aided in flavour development and tannin ripeness, while minimising any green characters. 

The handpicked fruit was destemmed with minimal crushing to keep berries whole, then chilled at 8 degrees for a three-day cold soak in closed fermenters to retain excellent colour and flavour. The turbopiguer was used daily to promote better homogenisation and extraction without damaging the berries. The wine was tasted daily to monitor the tannin extraction, and was on the skins for 10-14 days before being pressed off. This was the point where the best combination of fruit and tannin balance was achieved. The wine was then transferred to barrel for MLF. It was racked once during the following 9 months, to aid in maturation and development. The individual varieties were kept in separate barrels until blending.
